Hey, I have read the terms and conditions and similar material but still cannot figure out one thing. If I were to win the video phase of a challenge, would I be able to post it online (like on my video website or YouTube channel?)

It depends - Some sponsors are okay with winners posting work on personal channels and others are not. Best to ask before posting anything.

Speaking of which, Mr. Wills,The Force For Fun contest got decided months ago-is there still a moratorium on ANY video-winner or loser -from posting their video on Youtube?

You will always own the intellectual property to your videos. Companies are offering to pay you for the rights to your videos. Check the contracts to see what you still have ownership of after you sign.
